<b>細部計畫1:餘甘子多醣保健功效之研究</b><P>餘甘子富含含維生素 C 及多酚類化合物。許多研究已證實餘甘子具有抗氧化、抗發炎、抗糖尿病、降血脂、抗癌、抗高血壓等功效。除此之外,文獻資料指出餘甘子富含多醣成分,然而餘甘子多醣組成內容與特性仍未有研究釐清。許多植物多醣已被證實具有益生質之特性,其可協助調整腸道菌相。由於近年許多研究證實腸道菌相與許多生理機能調節具高度關聯性,因此本研究擬分析餘甘子多醣組成與特性,並以活體腸道黏膜保護為重點,確立餘甘子多醣對 TNBS 誘導腸炎之生理保健功效及腸道菌相之調節。本計畫研究成果可協助提升餘甘子多醣應用價值,促進餘甘子加值化產品之發展。</P><br/><b>細部計畫2:開發發酵紅藜結合發芽糙米之保健飲品</b><P>隨著社會經濟急速變遷、醫療科學的進步與飲食習慣的改變,社會高齡化與肥胖代謝疾病也已成為全球重視的健康問題。許多文獻已指出發芽的糙米不僅能增加口感與風味,也富含許多營養素,例如GABA,對人體是良好的營養來源。台灣藜為台灣原住民的傳統食品,因顏色鮮豔廣受民眾喜愛,又稱穀物中的『紅寶石』,加在料理中可增加菜餚視覺上豐富度。由於其高膳食纖維和多酚類化合物,可以穩定血糖,此外它還富含花青素與類黃酮,具有抗氧化和抗發炎特性。此篇以<strong>細胞及線蟲模式探討紅藜結合發芽糙米發酵產品之生物活性與其抗氧化功效,探討其對於脂肪細胞分化之影響,並藉由秀麗隱桿線蟲模式生物,評估紅藜結合發芽糙米發酵產品是否具有改善肥胖與老化之潛能並開發保健飲品。</strong></P><br/><b>細部計畫3:國產文旦產製黑柚之新產品開發及其保健效能探討</b><P>柚子為臺灣重要的經濟作物,但近年來受氣候變遷、產銷失衡及次級品滯銷等因素,導致價格大幅滑落。根據先前研究顯示,柚子中之柚皮苷具有預防非酒精性脂肪肝之能力。故本計畫擬續 110 年度計畫之黑柚熱水萃取物對棕櫚酸鹽 (palmitate) 及油酸 (oleic acid) 誘導 HepG2 脂質蓄積之細胞模式,評估黑柚對肝損傷之保護效應。另以黑柚經不同加工方式製成黑柚保健產品 (黑柚微膠囊、黑柚沖泡飲粉),期本研究可增加黑柚之附加價值及產品多樣性,並將此研究成果技術轉移給民間廠商,輔導業者產製多元化之黑柚產品。</P>

<b>1:Health benefits of polysaccharides from Phyllanthus emblica L.</b><P><em>Phyllanthus emblica</em> L. contains an abundant amount of vitamin C and polyphenol compounds. Many studies have shown that <em>Phyllanthus emblica</em> L. has various biologic activities, including anti-oxidative, anti-inflammatory, anti-diabetic, anti-hyperlipidemic, anti-cancer, and anti-hypertensive properties. In addition, the literature indicates that <em>Phyllanthus emblica</em> L. is rich in polysaccharides; however, the composition and chemical characteristics of <em>Phyllanthus emblica</em> L. polysaccharides are still unclear. The plant polysaccharides have been found to act as prebiotics, which can modulate gut microbiota. Notably, the gut microbiota is closely related to various physiological functions. Accordingly, this project aimed to analyze the composition and characteristics of<em> Phyllanthus emblica</em> L. polysaccharides and to evaluate the protective effects of <em>Phyllanthus emblica</em> L. polysaccharides against TNBS-induced colitis by modulating gut microbiota in rats or mice. The research results of this project may help to increase the application value of <em>Phyllanthus emblica</em> L., promote the development of<em> Phyllanthus emblica</em> L. value-added products.</P><br/><b>2:Development of fermented red quinoa combined with germinated brown rice health beverages</b><P>According to the rapid changes in the social economy, advances in medical science, and changes in dietary habits, aging society and obesity, and metabolic diseases have also become global health issues. Many kinds of literature have pointed out that germinated brown rice can not only increase the taste and flavor but also be rich in many nutrients, such as GABA, which is a good source of nutrition for humans. Taiwan quinoa is a traditional food of the aborigines of Taiwan. It is widely loved by people because of its bright color. It is also known as the "ruby" in grains. Adding it to the dishes can increase the visual richness of the dishes. Due to its high dietary fiber and polyphenol compounds, it can stabilize blood sugar. In addition, it is also rich in anthocyanins and flavonoids, which have antioxidant and anti-inflammatory properties. This study discusses the biological activity and antioxidant effect of red quinoa combined with germinated brown rice fermented products. Furthermore, exploring its effect on the differentiation of fat cells and using the <em>Caenorhabditis elegans</em> model which evaluates whether the fermented product of red quinoa combined with germinated brown rice has the potential to improve aging and obesity and develop healthy beverages.</P><P> </P><br/><b>3:Development of domestic wentan black pomelo products and evaluation of their health effects</b><P>Pomelo is an important economic crop in Taiwan. However, in recent years due to climate change, imbalance in production and sales, and slow-selling of substandard products, prices have fallen sharply. According to previous studies, the naringin in pomelo has the ability to prevent non-alcoholic fatty liver disease. Therefore, this project intends to continue the 110-year plan of the black pomelo hot water extract on the palmitate and oleic acid induced HepG2 lipid accumulation and lipid synthesis transcription factor protein expression, further confirmed black pomelo products have the protective effect of liver damage. In addition, black pomelo health products (black pomelo microcapsules, black pomelo brewing drinks) are made from black pomelo through different processing methods. It is expected this research can increase the added value and product diversity of black pomelo, and transfer the technology of this research result to private manufacturers and give advice on producing diversified black pomelo products.</P>
